Who has time in the early morning to make a fantastic breakfast on their way out the door? I can barely make it to work on time most days and am starving by the time I get there. You hear people meal prep for dinners, well I started meal prep for breakfast, and it has saved my wallet and my waistline by doing so. Today I am going to share my top 5 favorite simple and healthy meal prep breakfasts that are easy to make and delicious to eat!

Overnight Oats, an easy favorite
We have all heard about overnight oats and I absolutely love them. There is not an easier way for me to enjoy a delicious breakfast while also working towards my whole grain consumption goal. Since Thanksgiving, I have tried really hard to make healthier eating choices. While it is still a struggle I have not quit, so making sure I get all 5 food groups into my day is important to me.
Peanut Butter Overnight Oats is my favorite overnight oats recipe. It can be vegan if that is your preference, but I just use regular oats and milk in mine. By adding flax seeds and chia seeds, I am consuming a rich source of omega-3 fatty acids contributing to my heart health, which is my health and fitness goal! 💪 These powerhouse seeds give me a boost of fiber which aids digestion but also feelings of fullness to aid in weight loss.
Cottage Cheese in a muffin is not crazy
My next favorite easy and delicious breakfast meal prep recipe is Cottage Cheese Egg Muffins. (Don’t knock it ’til you try it!) These babies could not be easier to throw together. Choose your favorite cottage cheese, farm fresh eggs, 🥚 cheddar cheese, scallions, and some pantry staples, mix it all together and bake it in your favorite muffin tin. Viola! Now you have 6 muffins to eat during the week. I add to the meal a serving of fruit and some bacon 🥓 and there is my yummy and quick breakfast at work.
Who doesn’t love a smoothie?
Next, my week would not be complete without a smoothie or two. Back to the peanut butter I go! Rolled oats, frozen banana, and peanut butter start this smoothie off with great flavor and texture. Oats breakdown really great so you don’t even know they were there. Add some ground flax seed again, cinnamon, and vanilla, and your tastebuds will say thank you.
Maple syrup is also an option for added sweetness, but I prefer mine without. A tip I use to keep bananas ready for my smoothies is to buy them in bulk at a discount when they are almost going to go bad. I bring them home, slice them up, and freeze them into 2 banana portions which is exactly what this recipe calls for.
A secret ingredient! Otherwise known as, Nutmeg
Back to the muffin category, these Easy Applesauce Muffins are so tasty with a little dash of nutmeg, it surprises me every time I eat them. The whole wheat flour makes these muffins thick and filling, and the sweetness from the applesauce is a surprising welcome addition.
These do not boast the healthiest choice with half a cup of sugar, but they are really delicious, and your kids will like them too, mine do! The recipe makes me 6 large and about 4 regular size muffins for the week. I absolutely love meal planning and preparing my work week of breakfasts on Sundays. 💗
Good ole’ Breakfast Burrito
Lastly, but certainly not the least of these, is my favorite breakfast burrito. 🌯 This one is so simple and fast, and while it may be basic it pulls through every time. Ground breakfast sausage, and eggs cooked and mixed together on a whole wheat wrap is my favorite way to throw this together. Add some shredded cheese to keep the wrap together. Who doesn’t like cheese? I cook it all at home, put the shredded cheese in my favorite reusable bag, and the sausage and egg mixture in a container then assemble them at work when I am ready to eat!

My internal breakfast clock goes off between 7-8 every morning, ⏰⏰⏰ and if I don’t have something to get me through until lunch I will have to run out and grab a fast-food breakfast which costs WAY too much these days. And that is the complete opposite of what I am trying to fuel my body with.
My health focus is heart health. I want to lose weight and inches of course, but my main goal is doing what I can to improve my overall health, focusing on my heart. Did you know that heart disease is the number one killer of women? As I keep aging, I have got to keep moving and eating healthier than before.
